Our Wood Fired Pizza

All of our pizza dough and sauces are made in-house.  Our pizza dough is a 24 hour dough with 67 percent hydration. What does that mean? It means that our dough is soft and tastes delicious. Our raw tomato pizza sauce is an authentic Neapolitan Italian Sauce.  It consists of hand crushed peeled whole tomatoes grown here on our farm - salt - olive oil - dried oregano.

Our pesto sauce is made when our purple basil and garlic is in season - it consists of fresh garlic - purple basil - parmesan reggiano - salt and pepper. Our Ricotta is made in-house using Skye Glen Creamery milk, and our mozzarella cheese comes from Skye Glen Creamery. They are located at 1080 E Skye Glen Rd, Whycocomagh.  Visit their farm and creamery!

We try to use toppings grown here at the farm - so they change seasonally.  Our pizzas are finished with our own parmigiana reggiano, oregano, and lavender salt EVOO. Our lavender salt is made right here on our farm!
